While E Minor pentatonic will work, it doesn't imply the Dorian mode as well as A Minor pentatonic does (in this particular key of C). The modal sounds work best when the relative major/minor scale in that key is used over the ii chord. Another big reason is that E Minor pentatonic isn't the best choice is because it doesn't have the minor 7 note of the ii chord in it. Try going with the pentatonic scale a fifth above the ii chord. Your fingers will naturally land on more inside sounding flavors.
